This is an Isolated Soy Protein with a minimum protein content of 90%. It has a medium viscosity and easy dispersion in water in presence of salt.
It has the capacity to retain water up to 4.5 Kg. and fats up to 5 Kg. per Kg. of protein used. Therefore it will produce consistent and elastic gels without liberating the absorbed water and fats. |

Applications are in meat products of cattle, birds, pigs and fish, as well as in the preparation of emulsifications of all types, increasing texture characteristics, juiciness and product yield without contributing to color or taste of these products. |
